Delicious French Onion Soup Recipe

French Onion Soup, Soupe à l’oignon in native French, is a great way to warm up during the winter, as well as make your taste buds dance!

Mrs. Gladie Nordsell, one of our residents, gave us one of her favorite recipes to share. She hopes you enjoy!

 

1/2c     unsalted butter

2tbsp   olive oil

4c        sliced onions

10.5oz beef broth

2tbls    dry sherry

1tsp    dried thyme

Pinch of salt and pepper

4 slices French bread

4 slices provolone cheese

2 slices Swiss cheese, diced

1/4c     grated Parmesan cheese

Oven safe serving bowls

 

Step 1

Melt butter with olive oil in an 8qt stock pot on medium heat. Add onions and continuously stir until tender and translucent. Do not brown the onions.

Step 2

Add beef broth, sherry and thyme. Season with salt and pepper, and simmer for 30 minutes.

Step 3

Heat the oven broiler

Step 4

Ladle soup into oven safe bowl and place one slice bread on top of each (bread may be broke into pieces if you prefer). Layer each slice of bread with a slice of provolone, ½ slice diced Swiss and 1tbsp Parmesan cheese. Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.
